Ingredients

  • 1 lb Boneless, skinless chicken thighs
  • 2 tbsp Vegetable oil
  • 1 medium Onion
  • 4 cloves Garlic
  • 1 inch Ginger
  • 1 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1/2 tsp Chili powder
  • 6 cups Vegetable broth
  • 1 can Coconut milk
  • 8 oz Noodles (rice or wheat)
  • 1 cup Carrots
  • 1 cup Cabbage
  • 2 cups Spinach
  • 2 tbsp Soy sauce
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/4 cup Fresh cilantro

Instructions

  1. 1Cut the 1 lb boneless, skinless chicken thighs into 1-inch pieces. Measure and set aside.
  2. 2Heat the 2 tbsp vegetable oil in a large 6-quart pot over medium heat (300°F / 150°C). Add the cut chicken thighs and cook, stirring occasionally, for 5-7 minutes, until browned on all sides. The chicken should reach an internal temperature of 165°F (74°C).
  3. 3Add the 1 medium onion (chopped), 4 cloves garlic (minced), and 1 inch ginger (grated) to the pot with the chicken. Cook, stirring frequently, for 3-4 minutes, until the vegetables have softened and become fragrant.
  4. 4Stir in the 1 tsp turmeric powder, 1 tsp cumin powder, 1 tsp coriander powder, and 1/2 tsp chili powder. Cook, stirring constantly, for 1 minute until the spices are fragrant.
  5. 5Pour in the 6 cups vegetable broth and the 1 can (about 13.5 oz) coconut milk. Stir well to combine. Increase the heat to medium-high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer gently for 15 minutes.
  6. 6Add the 8 oz noodles, 1 cup carrots (sliced), and 1 cup cabbage (shredded) to the simmering soup. Stir to combine. Continue to simmer, uncovered, for 8-12 minutes, or until the noodles are tender and the carrots are cooked through, stirring occasionally to prevent sticking.
  7. 7Stir in the 2 cups spinach and 2 tbsp soy sauce. Cook for 1-2 minutes, stirring gently, until the spinach has wilted.
  8. 8Taste the soup and add the 1 tsp salt and 1/2 tsp black pepper as needed. Stir well.
  9. 9Ladle the soup into bowls. Garnish with the 1/4 cup fresh cilantro (chopped) and serve immediately.
