Ingredients

  • 1.5 lbs Chicken breasts
  • 3 medium Bell peppers (various colors)
  • 1 medium Onion
  • 2 tbsp Fajita seasoning
  • 3 cups Cooked rice
  • 2 medium Avocado
  • 2 tbsp Lime juice
  • 0.25 cup Cilantro
  • 0.5 cup Dairy-free sour cream (coconut based)
  • 2 tbsp Olive oil

Instructions

  1. 1Slice chicken breasts into thin strips. Slice bell peppers and onion into strips as well.
  2. 2In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through.
  3. 3Add bell peppers and onion to the skillet and cook until softened, about 5-7 minutes.
  4. 4Stir in fajita seasoning and cook for another minute until fragrant.
  5. 5While chicken and vegetables are cooking, prepare the avocado sauce. In a blender or food processor, combine avocado, lime juice, cilantro, and dairy-free sour cream (if using). Blend until smooth and creamy.
  6. 6Assemble the bowls: Start with a base of cooked rice, top with chicken and vegetable mixture. Drizzle with avocado sauce and serve immediately.
