Dairy-Free Chendol

A chilled dessert made with coconut milk, green jelly noodles, red beans, and palm sugar syrup. Naturally dairy-free and refreshing.

Ingredients

  • 4 cups Coconut milk
  • 1 cup Green rice flour jelly noodles
  • 1/2 cup Red beans (cooked)
  • 1/2 cup Palm sugar (Gula Melaka)
  • 1/4 cup Water
  • 1 pinch Pinch of salt
  • 4 cups Shaved ice

Instructions

  1. 1In a medium saucepan, combine the 1/2 cup Palm sugar (Gula Melaka) and 1/4 cup Water. Heat over medium heat, stirring occasionally, until the 1/2 cup Palm sugar (Gula Melaka) has completely dissolved and the liquid has thickened slightly, about 5 to 7 minutes. Stir in the 1 pinch Pinch of salt. Remove from heat and let the syrup cool completely.
  2. 2Prepare your serving glasses or bowls. Add about 1 cup of the 4 cups Shaved ice to each glass.
  3. 3Evenly distribute the 1 cup Green rice flour jelly noodles and the 1/2 cup Red beans (cooked) over the shaved ice in each glass.
  4. 4Pour approximately 1 cup of the 4 cups Coconut milk over the ingredients in each glass.
  5. 5Drizzle a generous amount of the cooled palm sugar syrup over the top of each serving.
  6. 6Serve immediately to enjoy the refreshing dessert.
