Ingredients

  • 4 Eggs
  • 2 tbsp Water
  • to taste Salt
  • to taste Pepper
  • 1 tbsp Vegetable Oil
  • 1/2 cup Chakalaka (South African Relish)
  • 1/4 cup Dairy-Free Cheese (Shredded)

Instructions

  1. 1In a medium bowl, whisk together the 4 eggs, 2 tablespoons of water, salt, and pepper until everything is completely combined and looks frothy.
  2. 2Place a 10-inch non-stick skillet over medium heat, which is about 350°F (175°C). Add the 1 tablespoon of vegetable oil to the hot skillet. Let it heat for about 30 seconds until it shimmers.
  3. 3Pour the whisked egg mixture into the hot skillet. Let it cook undisturbed for 2 to 3 minutes, or until the edges of the omelette start to look set and slightly firm.
  4. 4Spoon the 1/2 cup of chakalaka evenly over one half of the omelette. Sprinkle the 1/4 cup of dairy-free cheese over the chakalaka.
  5. 5Carefully use a spatula to fold the plain half of the omelette over the chakalaka and cheese filling. Cook for another 1 to 2 minutes, until the dairy-free cheese is melted and the omelette is cooked through.
  6. 6Slide the omelette onto a plate and serve immediately.
