Ingredients

  • 4 large Bell peppers
  • 1 lb Vegan sausage
  • 2 cups Cooked rice
  • 1 medium Onion
  • 1 medium Bell pepper (red)
  • 2 stalks Celery
  • 3 cloves Garlic
  • 2 tbsp Cajun seasoning
  • 1 can Diced tomatoes
  • 2 tbsp Olive oil
  • 0.5 cup Vegetable broth
  • 0.5 cup Dairy-free shredded cheese

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Cut bell peppers in half lengthwise and remove seeds and membranes.
  3. 3Heat olive oil in a large skillet over medium heat.
  4. 4Saute onion, red bell pepper, and celery until softened, about 5 minutes.
  5. 5Add garlic and vegan sausage and cook until sausage is browned, about 5-7 minutes.
  6. 6Stir in cooked rice, Cajun seasoning, and diced tomatoes.
  7. 7Spoon mixture into bell pepper halves.
  8. 8Place stuffed peppers in a baking dish and pour vegetable broth into the bottom of the dish.
  9. 9Bake for 30-40 minutes, or until peppers are tender. Sprinkle with dairy-free cheese (if using) during the last 5 minutes of baking.
  10. 10Serve hot.
