Ingredients

  • 1.5 lbs Chicken breasts
  • 2 tbsp Cajun seasoning
  • 2 tbsp Olive oil
  • 1 medium Onion
  • 1 medium Bell pepper (any color)
  • 3 cloves Garlic
  • 2 cups Chicken broth
  • 1 cup Long-grain rice
  • 2 tbsp Dairy-free butter substitute
  • 2 tbsp Green onions

Instructions

  1. 1Season chicken breasts with Cajun seasoning.
  2. 2Heat olive oil in a large skillet over medium-high heat.
  3. 3Cook chicken until cooked through, about 6-8 minutes per side. Set aside and shred or dice.
  4. 4In the same skillet, saute onion and bell pepper until softened, about 5 minutes.
  5. 5Add garlic and cook for 1 minute more.
  6. 6Stir in chicken broth and rice. Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes, or until rice is cooked.
  7. 7Stir in dairy-free butter substitute until melted.
  8. 8Serve rice topped with chicken and garnish with green onions.
