Ingredients

  • 2 cans Black beans
  • 6 cups Vegetable broth
  • 1 medium Onion
  • 1 medium Bell pepper (red)
  • 2 stalks Celery
  • 4 cloves Garlic
  • 2 tbsp Cajun seasoning
  • 1 tsp Smoked paprika
  • 1 tbsp Olive oil
  • 1 cup Dairy-free sour cream

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Saute onion, bell pepper, and celery until softened, about 5 minutes.
  3. 3Add garlic and cook for 1 minute more.
  4. 4Stir in black beans, vegetable broth, Cajun seasoning, and smoked paprika.
  5. 5Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. 6Use an immersion blender to partially blend the soup to desired consistency. Alternatively, blend half of the soup in a regular blender and return to the pot.
  7. 7Serve hot, topped with dairy-free sour cream (optional).
