Dairy-Free Bunny Chow (Bean Curry)

A Durban-style curry served in a hollowed-out loaf of bread, made completely dairy-free with coconut milk and hearty beans. A truly unique and satisfying lunch.

Ingredients

  • 2 cups Cannellini beans, cooked
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Ginger, minced
  • 2 tbsp Curry powder
  • 1 tsp Garam masala
  • 1/2 tsp Chili powder
  • 1 can Coconut milk
  • 1 can Diced tomatoes
  • 1/2 cup Vegetable broth
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 Loaf of bread

Instructions

  1. 1Hollow out the loaf of bread, reserving the inside.
  2. 2In a large pot, sauté the chopped onion, garlic, and ginger until softened.
  3. 3Add the curry powder, garam masala, and chili powder. Cook for another minute.
  4. 4Stir in the cannellini beans, coconut milk, diced tomatoes, and vegetable broth.
  5. 5Season with salt and pepper.
  6. 6Simmer for 20-25 minutes, or until the sauce has thickened.
  7. 7Spoon the bean curry into the hollowed-out loaf of bread. Top with some of the reserved bread pieces, if desired.
