Dairy-Free Bruschetta with Balsamic Glaze

Ingredients

  • 1 loaf Baguette
  • 2 cups Tomatoes
  • 1/4 cup Fresh Basil
  • 2 cloves Garlic
  • 1/4 cup Olive Oil
  • 1/4 cup Balsamic Vinegar
  • 1 tablespoon Maple Syrup
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Preheat your oven broiler or toaster oven. Slice the 1 loaf of baguette into 1-inch thick rounds. Place the baguette slices on a baking sheet and toast them under the broiler or in the toaster oven until lightly golden brown. Watch them closely so they do not burn.
  2. 2While the baguette is toasting, prepare the topping. Dice the 2 cups of tomatoes into small pieces. Chop the 1/4 cup of fresh basil. Mince the 2 cloves of garlic.
  3. 3In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, 1/4 cup of olive oil, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir everything together gently.
  4. 4Prepare the balsamic glaze. Pour the 1/4 cup of balsamic vinegar and 1 tablespoon of maple syrup into a small saucepan. Place the saucepan over low heat. Let it simmer for 5-7 minutes, stirring occasionally, until the mixture has slightly thickened and coats the back of a spoon. Remove from heat.
  5. 5Arrange the toasted baguette slices on a serving platter. Spoon the tomato mixture evenly onto each toasted baguette slice.
  6. 6Drizzle the prepared balsamic glaze over the tomato-topped baguette slices. Serve immediately.
