Dairy-Free Brigadeiro Oatmeal

Ingredients

  • 1/2 cup Rolled Oats
  • 1 cup Coconut Milk
  • 2 tablespoons Cocoa Powder
  • 2 tablespoons Dairy-Free Chocolate Chips
  • 1-2 tablespoons Sugar or Maple Syrup
  • 1/4 teaspoon Salt
  • 1 tablespoon Dairy-Free Sprinkles (optional)

Instructions

  1. 1In a large heavy-bottomed pot, combine the 1/2 cup rolled oats, 1 cup coconut milk, 2 tablespoons cocoa powder, 1-2 tablespoons sugar or maple syrup, and 1/4 teaspoon salt.
  2. 2Place the pot over medium heat. Bring the mixture to a simmer, stirring constantly with a whisk or wooden spoon to prevent the oats and cocoa from sticking to the bottom of the pot. Maintain this constant stirring for 5 to 7 minutes, or until the oatmeal has thickened to your desired creamy consistency. You will notice it becomes noticeably thicker.
  3. 3Remove the pot from the heat. Add the 2 tablespoons dairy-free chocolate chips to the thickened oatmeal and stir until they are completely melted and the mixture is smooth and glossy.
  4. 4Pour the warm oatmeal into a serving bowl.
  5. 5If you are using them, sprinkle the 1 tablespoon dairy-free sprinkles over the top of the oatmeal.
  6. 6Serve the dairy-free brigadeiro oatmeal immediately.
