Dairy-Free Boxty Pancakes

Ingredients

  • 1 cup Raw Potatoes (grated)
  • 1 cup Mashed Potatoes (cold)
  • 1/2 cup All-Purpose Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/4 cup Unsweetened Applesauce
  • 2 tbsp Olive Oil

Instructions

  1. 1Grate the 1 cup of raw potatoes. Place the grated potatoes in the center of a clean kitchen towel and twist the towel to squeeze out as much excess liquid as possible.
  2. 2In a large bowl, combine the squeezed grated raw potatoes, 1 cup of cold mashed potatoes, 1/2 cup of all-purpose flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt.
  3. 3Add the 1/4 cup of unsweetened applesauce to the bowl and mix everything together with a spoon until it is just combined. Be careful not to overmix the batter.
  4. 4Heat 2 tablespoons of olive oil in a large skillet over medium heat, which is approximately 350°F (175°C).
  5. 5Drop rounded spoonfuls of the boxty batter onto the hot skillet. Do not overcrowd the pan; cook in batches if necessary.
  6. 6Cook the boxty for 3 to 4 minutes on each side. They are done when they are golden brown and cooked through, with a slightly crispy exterior.
  7. 7Remove the cooked boxty from the skillet and serve them warm.
