Ingredients

  • 2 cans Black beans
  • 1 cup Gluten-free breadcrumbs
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1 tbsp Chili powder
  • 1 tsp Cumin
  • 2 medium Avocado
  • 2 tbsp Lime juice
  • 1/4 cup Coconut milk (canned, full-fat)
  • 1/4 cup Cilantro
  • 4 count Gluten-free burger buns
  • 1 tbsp Olive oil

Instructions

  1. 1Drain and rinse the 2 cans of black beans, then transfer them to a large bowl and mash thoroughly with a fork or potato masher. Dice the 1/2 medium onion into 1/4-inch pieces and mince the 2 cloves of garlic.
  2. 2Add the 1 cup of gluten-free breadcrumbs, the diced 1/2 medium onion, the minced 2 cloves of garlic, the 1 tbsp of chili powder, and the 1 tsp of cumin to the mashed black beans. Mix all ingredients together until well combined and uniform.
  3. 3Divide the black bean mixture into 4 equal portions and form each portion into a patty, approximately 3/4-inch thick and sized to fit the 4 count gluten-free burger buns.
  4. 4Heat a large 12-inch non-stick skillet over medium heat (300-325°F / 150-163°C). Add the 1 tbsp of olive oil to the hot skillet, then carefully place the 4 black bean patties into the pan. Cook for 5-7 minutes per side, until the patties are golden brown and feel firm to the touch, indicating they are heated through.
  5. 5While the burgers cook, prepare the avocado crema: Halve and pit the 2 medium avocados, then scoop the flesh into a blender or food processor. Add the 2 tbsp of lime juice, the 1/4 cup of canned full-fat coconut milk, and the 1/4 cup of cilantro to the blender and process until completely smooth and creamy.
  6. 6Serve the cooked black bean burgers immediately by placing each patty onto one of the 4 count gluten-free burger buns, then spooning a generous amount of the avocado crema over each burger.
