Ingredients

  • 1 lb Beef sirloin
  • 12 oz Egg-free Noodles
  • 1 medium Onion
  • 8 oz Mushrooms
  • 2 cloves Garlic
  • 1 cup Coconut cream
  • 1 cup Vegetable broth
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh parsley
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Cut the 1 lb of beef sirloin into thin strips. Place a 12-inch skillet over medium-high heat (400°F/200°C) and add the 2 tablespoons of olive oil. Once the oil is shimmering, add the beef strips and cook for 3-5 minutes, stirring occasionally, until browned on all sides. Remove the browned beef from the skillet and set it aside on a plate.
  2. 2To the same 12-inch skillet, add the 1 medium onion, chopped into 1/2-inch pieces, and the 8 oz of mushrooms, sliced. Cook over medium-high heat for 5-7 minutes, stirring often, until the onion is softened and the mushrooms have released their liquid and started to brown. Stir in the 2 cloves of garlic, minced, and cook for 1 minute more, stirring constantly, until fragrant.
  3. 3Pour the 1 cup of coconut cream and the 1 cup of vegetable broth into the skillet with the cooked vegetables, then stir in the 1 tablespoon of Dijon mustard. Bring the mixture to a gentle simmer over medium-high heat, then reduce the heat to medium-low (300°F/150°C). Cook for 5 minutes, stirring occasionally, until the sauce has thickened slightly.
  4. 4Return the cooked 1 lb of beef sirloin to the skillet with the sauce. Stir everything together and cook for 2-3 minutes over medium-low heat, until the beef is heated through. Stir in the 2 tablespoons of fresh parsley, chopped, the 1/2 teaspoon of salt, and the 1/4 teaspoon of black pepper until well combined.
  5. 5While the stroganoff finishes, bring a large pot of water to a rolling boil. Add the 12 oz of egg-free noodles and cook for 8-10 minutes, or until they are tender but still firm to the bite. Drain the noodles well.
  6. 6Serve the dairy-free beef stroganoff immediately over the cooked 12 oz of egg-free noodles.
