Ingredients

  • 8 links Pork Sausages
  • 2 lb Potatoes
  • 1/2 cup Plant-Based Milk
  • 2 tbsp Plant-Based Butter
  • 2 large Onions
  • 1 cup Beef Broth
  • 1 tbsp Balsamic Vinegar
  • 1 tbsp Cornstarch
  • 2 tbsp Water
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Peel the 2 lb potatoes and cut them into 1.5-inch chunks. Place the potato chunks in a large heavy-bottomed pot and cover them with cold water by at least 1 inch. Bring the water to a boil over high heat (212°F / 100°C) and cook for 15-20 minutes, or until a fork easily pierces the potatoes. Drain the potatoes thoroughly in a colander.
  2. 2While the potatoes are boiling, place the 8 links Pork Sausages in a large skillet (12-inch) over medium-high heat. Cook for 12-15 minutes, turning occasionally, until browned on all sides and cooked through. The internal temperature should reach 160°F (71°C). Remove the sausages from the skillet and set aside.
  3. 3Add the 2 large onions, thinly sliced, to the same large skillet with any remaining sausage drippings over medium heat (325°F / 163°C). Cook for 15-20 minutes, stirring occasionally, until the onions are softened and caramelized to a deep golden brown color.
  4. 4Pour the 1 cup Beef Broth and 1 tbsp Balsamic Vinegar into the skillet with the caramelized onions. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan. In a small bowl, whisk together the 1 tbsp Cornstarch and 2 tbsp Water until smooth to create a slurry.
  5. 5Add the cornstarch slurry to the simmering onion mixture in the skillet. Cook, stirring constantly, for 1-2 minutes, until the gravy has thickened to your desired consistency. It should coat the back of a spoon.
  6. 6Return the cooked 8 links Pork Sausages to the skillet with the thickened gravy and turn to coat. Season the gravy with 1/2 tsp Salt and 1/4 tsp Black Pepper.
  7. 7While the gravy is simmering, return the drained potatoes to the large heavy-bottomed pot. Add the 1/2 cup Plant-Based Milk and 2 tbsp Plant-Based Butter. Mash the potatoes with a potato masher or fork until smooth and creamy. Season with a pinch of salt and pepper if desired (optional, as salt and pepper are listed for the gravy).
  8. 8Serve the 8 links Pork Sausages over the mashed potatoes, spooning the onion gravy generously over the top.
