Ingredients

  • 1 cup White Rice
  • 2 cups Water
  • 2 13.5 oz cans Coconut Milk
  • 1/2 cup Sugar
  • 1 stick Cinnamon Stick
  • 1 tsp Lemon Zest
  • 1/4 tsp Salt
  • 1/2 tsp Ground Cinnamon

Instructions

  1. 1Rinse the rice in a fine-mesh sieve until the water runs clear.
  2. 2In a medium saucepan, combine the rice, water, coconut milk, sugar, cinnamon stick, lemon zest, and salt.
  3. 3Bring to a simmer over medium heat, then reduce heat to low, cover, and cook for 30-35 minutes, or until the rice is tender and the liquid has been absorbed, stirring occasionally to prevent sticking.
  4. 4Remove the cinnamon stick and stir in the ground cinnamon.
