Ingredients

  • 1 cup White rice
  • 2 cups Water
  • 2 cans Coconut milk
  • 0.75 can Vegan sweetened condensed milk
  • 1 Cinnamon stick
  • 1 strip Lemon peel
  • 1 tsp Vanilla extract
  • 1 tsp Ground cinnamon

Instructions

  1. 1In a medium saucepan, combine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the water is absorbed.
  2. 2Add coconut milk, sweetened condensed milk, cinnamon stick, and lemon peel to the rice. Stir well.
  3. 3Bring to a simmer over medium heat, then reduce heat to low and simmer for 30 minutes, stirring occasionally, until the rice is creamy and has absorbed most of the liquid.
  4. 4Remove from heat and stir in vanilla extract.
  5. 5Remove the cinnamon stick and lemon peel.
  6. 6Let cool slightly, then spoon into small serving dishes or ramekins.
  7. 7Sprinkle with ground cinnamon before serving. Chill for at least 1 hour before serving.
