Ingredients

  • 1 cup Glutinous Rice (Malagkit)
  • 6 cups Chicken Broth
  • 1.5 cups Cooked Chicken, shredded
  • 1 can Coconut Milk
  • 2 tablespoons Ginger, minced
  • 4 cloves Garlic, minced
  • 1 tablespoon Fish Sauce (Patis)
  • 1/2 cup Green Onions, chopped
  • 2 large Hard-boiled Eggs, sliced
  • 4 wedges Lemon or Calamansi wedges
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Rinse the glutinous rice in a fine-mesh sieve until the water runs clear.
  2. 2In a large pot, combine the rice, chicken broth, ginger, and garlic. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, or until the rice is very soft and porridge-like.
  3. 3Stir in the shredded chicken and coconut milk. Simmer for another 10 minutes, stirring occasionally, until heated through.
  4. 4Season with fish sauce and black pepper to taste.
  5. 5Serve hot, garnished with green onions, sliced hard-boiled eggs, and a wedge of lemon or calamansi.
