Ingredients

  • 2 cups Gluten-Free All-Purpose Flour
  • 1/2 cup Vegan Butter
  • 1/2 cup Iced Water
  • 4 medium Apples
  • 1/2 cup Raisins
  • 1/4 cup Brown Sugar
  • 1 tsp Cinnamon
  • 1 tbsp Lemon Juice
  • 2 tbsp Vegan Egg Wash (Flaxseed Meal + Water)
  • for dusting Powdered Sugar

Instructions

  1. 1Prepare the gluten-free crust: Combine gluten-free flour and vegan butter in a food processor. Pulse until the mixture resembles coarse crumbs. Gradually add iced water until the dough comes together. Wrap in plastic wrap and chill for 30 minutes.
  2. 2Prepare the apple filling: Peel, core, and slice the apples. In a bowl, combine apples, raisins, brown sugar, cinnamon, and lemon juice.
  3. 3Preheat oven to 375°F (190°C).
  4. 4Roll out the chilled dough on a lightly floured surface into a large rectangle.
  5. 5Spread the apple filling evenly over the dough, leaving a small border.
  6. 6Roll the dough up tightly, starting from one long side. Brush with vegan egg wash (mix flaxseed meal with water and let sit for 5 minutes).
  7. 7Bake for 40-45 minutes, or until golden brown.
