Dairy-Free and Nut-Free Broodpudding (Bread Pudding)

Ingredients

  • 6 cups Stale bread
  • 2 cups Oat milk
  • 4 Eggs
  • 1/2 cup Sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Cinnamon
  • 1/2 cup Raisins
  • For greasing Vegan butter

Instructions

  1. 1Preheat your oven to 350°F (175°C). Use the vegan butter to thoroughly grease the inside of a baking dish.
  2. 2In a large mixing bowl, add the 6 cups of stale bread, 2 cups of oat milk, 4 eggs, 1/2 cup of sugar, 1 teaspoon of vanilla extract, and 1 teaspoon of cinnamon. Stir these ingredients together well until they are fully combined.
  3. 3Add the 1/2 cup of raisins to the mixture in the bowl. Let the mixture sit undisturbed for 10 to 15 minutes, which allows the stale bread to fully absorb the liquid ingredients.
  4. 4Carefully pour the entire bread pudding mixture from the bowl into the greased baking dish, spreading it evenly.
  5. 5Bake the bread pudding in the preheated oven for 35 to 40 minutes. It is done when the top is golden brown and the center feels set and firm to the touch.
  6. 6Remove the baking dish from the oven and place it on a wire rack. Let the broodpudding cool slightly for at least 10-15 minutes before serving, as this helps it set further and makes it easier to serve.
