Ingredients

  • 1.5 lbs Potatoes
  • 0.33 cup Olive oil
  • 4 cloves Garlic
  • 1 teaspoon Red pepper flakes
  • 0.25 cup Cilantro
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions

  1. 1Peel the 1.5 lbs Potatoes and cut them into 1-inch cubes. Place the cubed potatoes in a large bowl.
  2. 2Heat 0.33 cup Olive oil in a large 12-inch skillet over medium-high heat, about 400°F (200°C).
  3. 3Carefully add the cubed potatoes to the hot skillet. Cook for 15-20 minutes, stirring occasionally, until the potatoes are golden brown and crispy on all sides. You will see a golden-brown color and feel a crisp texture when they are ready.
  4. 4Add the 4 cloves of minced Garlic and 1 teaspoon of Red pepper flakes to the skillet with the potatoes. Cook for 1 minute more, stirring constantly, until the garlic is fragrant. Be careful not to burn the garlic.
  5. 5Stir in the 0.25 cup of chopped Cilantro, 2 tablespoons of Lemon juice, 1 teaspoon of Salt, and 0.5 teaspoon of Black pepper. Stir everything together to coat the potatoes evenly.
  6. 6Serve the Batata Harra hot as a flavorful side dish.
