- 1Peel and cube the potatoes. Drain and rinse the bamboo shoots.
- 2Heat the vegetable oil in a large pot over medium heat. Add the onion and cook until golden brown.
- 3Add the garlic, ginger, and green chilies and cook for 1 minute.
- 4Stir in the tomato paste, turmeric powder, cumin powder, coriander powder, and garam masala and cook for 1 minute.
- 5Add the potatoes and bamboo shoots to the pot and stir to coat with the spices.
