Dairy and Egg-Free Crumpets

Homemade crumpets made completely without dairy or eggs. Topped with dairy-free butter and your favorite jam.

Ingredients

  • 250 g Strong Bread Flour
  • 1 teaspoon Fast-Action Dried Yeast
  • 1 teaspoon Sugar
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 300 ml Warm Dairy-Free Milk (Oat or Almond)
  • as needed Dairy-Free Butter for greasing

Instructions

  1. 1In a large bowl, mix together the flour, yeast, sugar, and salt.
  2. 2Gradually add the warm dairy-free milk and whisk until you have a smooth batter. Cover the bowl with plastic wrap and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  3. 3After the batter has risen, gently stir in the baking soda.
  4. 4Heat a lightly greased griddle or frying pan over medium heat. Place crumpet rings on the griddle.
  5. 5Pour enough batter into each ring to fill it about halfway. Cook for 5-7 minutes, or until bubbles appear on the surface and the top is set. Remove the rings.
  6. 6Flip the crumpets and cook for another 2-3 minutes, or until lightly golden brown.
  7. 7Serve warm with dairy-free butter and jam.
