Ingredients

  • 1 cup Tapioca Flour
  • 2 cups Water
  • 1 cup Vegetable Broth
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 cup Oil for frying
  • 2 tablespoons Molasses

Instructions

  1. 1In a medium saucepan, combine 1 cup of tapioca flour, 2 cups of water, 1 cup of vegetable broth, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Stir these ingredients together until they are well mixed.
  2. 2Place the saucepan over medium heat. Cook the mixture, stirring constantly with a spoon or spatula, for 5 to 10 minutes. Continue stirring until the mixture thickens into a cohesive dough that pulls away from the sides of the pan. This is done when the dough forms a ball.
  3. 3Grease a square baking dish (approximately 8x8 inches) with a small amount of oil from the 1 cup of oil listed for frying. Carefully pour the thickened tapioca dough into the greased dish. Spread the dough evenly in the dish. Let the dough cool completely at room temperature for at least 30 minutes, or until it is firm to the touch.
  4. 4Once the tapioca dough is completely cool and firm, use a knife to cut it into 1-inch cubes. You should have approximately 25-36 cubes.
  5. 5Pour 1 cup of oil into a large skillet or frying pan. Heat the oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is hot enough by carefully dropping a tiny piece of tapioca into it; it should sizzle immediately.
  6. 6Carefully add the tapioca cubes to the hot oil in the skillet, being careful not to overcrowd the pan. Fry the cubes for 3 to 5 minutes, turning them occasionally, until they are golden brown and crispy on all sides. Fry in batches if necessary to ensure even cooking.
  7. 7Using a slotted spoon, remove the fried tapioca cubes from the hot oil and place them on a plate lined with paper towels to drain any excess oil. Let them drain for about 1 minute.
  8. 8Arrange the drained tapioca cubes on a serving platter. Drizzle the 2 tablespoons of molasses over the cubes just before serving to create a sweet and savory contrast.
