Dabo Kolo - Spiced Roasted Grains

Dabo Kolo is a popular Ethiopian snack consisting of spiced roasted grains. This version uses a mixture of barley, wheat, and chickpeas for a nutty and flavorful treat.

Ingredients

  • 1 cup Barley
  • 1 cup Wheat Berries
  • 1/2 cup Roasted Chickpeas
  • 1 tablespoon Berbere Spice
  • 2 tablespoons Niter Kibbeh (Spiced Clarified Butter)
  • 1/2 teaspoon Salt

Instructions

  1. 1Preheat your oven to 350°F (175°C).
  2. 2In a large mixing bowl, combine the 1 cup of barley, 1 cup of wheat berries, and 1/2 cup of roasted chickpeas.
  3. 3In a small saucepan or microwave-safe bowl, gently melt the 2 tablespoons of niter kibbeh until it is liquid. Pour the melted niter kibbeh over the grain mixture in the large mixing bowl, then add the 1 tablespoon of berbere spice and 1/2 teaspoon of salt. Stir well to ensure all the grains are evenly coated.
  4. 4Spread the seasoned grain mixture in a single, even layer onto a baking sheet.
  5. 5Place the baking sheet into the preheated oven at 350°F (175°C) and roast for 30 to 35 minutes. Every 10 to 15 minutes, carefully remove the baking sheet from the oven and stir the mixture to ensure even toasting. The dabo kolo is done when the grains are golden brown, toasted, and feel crispy when stirred.
