Ingredients

  • 1 can Canned Black Beans
  • 2 tbsp Tahini
  • 2 tbsp Lime Juice
  • 2 cloves Garlic
  • 1 tsp Cumin
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • 2 Plantains
  • 2 cup Vegetable Oil

Instructions

  1. 1Drain and rinse the black beans. Place them in a food processor.
  2. 2Add tahini, lime juice, garlic, cumin, olive oil, and salt to the food processor.
  3. 3Process until smooth and creamy. Add water, one tablespoon at a time, if needed to reach the desired consistency.
  4. 4Peel the plantains and slice them thinly on a diagonal.
  5. 5Heat the vegetable oil in a frying pan over medium heat.
  6. 6Fry the plantain slices in batches until golden brown and crispy, about 2-3 minutes per side.
  7. 7Remove the plantain chips with a slotted spoon and place on a paper towel-lined plate.
  8. 8Serve the black bean hummus with the plantain chips for dipping.
