Cuban Black Bean Soup

Ingredients

  • 2 tbsp Olive oil
  • 1 medium Onion
  • 1 medium Green bell pepper
  • 4 cloves Garlic
  • 30 oz Canned black beans
  • 6 cups Vegetable broth
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1 each Bay leaf
  • 2 tbsp Lime juice
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

  1. 1Sauté the onion and green bell pepper in olive oil until softened.
  2. 2Add garlic and cook for another minute.
  3. 3Stir in black beans, vegetable broth, cumin, oregano, and bay leaf.
  4. 4Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. 5Remove the bay leaf. Use an immersion blender to partially blend the soup until creamy, or blend in batches in a regular blender.
  6. 6Stir in lime juice, salt, and pepper. Serve hot.
