Ingredients

  • 1 can Black beans, canned, rinsed and drained
  • 2 tbsp Olive oil
  • 1/2 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1/2 cup Green bell pepper, chopped
  • 1 tsp Cumin
  • 1/2 tsp Oregano
  • 2 tbsp Lime juice
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 bag Plantain chips

Instructions

  1. 1Heat olive oil in a saucepan over medium heat.
  2. 2Add onion and cook until softened, about 5 minutes.
  3. 3Add garlic and green bell pepper and cook for another 2 minutes.
  4. 4Stir in cumin and oregano and cook for 1 minute more.
  5. 5Add black beans, lime juice, salt, and pepper.
  6. 6Bring to a simmer and cook for 10 minutes, stirring occasionally.
  7. 7Mash some of the beans with a fork to create a thicker consistency.
  8. 8Serve warm with plantain chips for dipping.
