Ingredients

  • 1 cup Oat Flour
  • 1 1/2 cups Plant-Based Milk (Oat or Soy)
  • 2 tablespoons Maple Syrup
  • 1/2 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 2 cups Mixed Berries (Fresh or Frozen)
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Sugar

Instructions

  1. 1In a blender, combine oat flour, plant-based milk, maple syrup, vanilla extract, and salt. Blend until smooth.
  2. 2Let the batter rest for at least 15 minutes.
  3. 3While the batter rests, prepare the berry compote. In a saucepan, combine mixed berries, lemon juice, and sugar. Cook over medium heat until the berries soften and release their juices, about 10-15 minutes.
  4. 4Heat a lightly oiled crêpe pan or skillet over medium heat.
  5. 5Pour a small amount of batter onto the hot pan, swirling to create a thin, even layer.
  6. 6Cook for 1-2 minutes per side, or until golden brown.
  7. 7Repeat with the remaining batter.
  8. 8Serve the crêpes warm, topped with the berry compote.
