Ingredients

  • 1 cup All-Purpose Flour
  • 1 tablespoon Sugar
  • 1/4 teaspoon Salt
  • 2 large Eggs
  • 1 1/4 cups Milk
  • 2 tablespoons Melted Butter
  • 1 cup Mixed Berries
  • 1/2 cup Crème Fraîche

Instructions

  1. 1In a blender, combine the 1 cup All-Purpose Flour, 1 tablespoon Sugar, and 1/4 teaspoon Salt.
  2. 2Add the 2 large Eggs and 1 1/4 cups Milk to the blender and blend until the mixture is completely smooth, with no lumps.
  3. 3Stir the 2 tablespoons Melted Butter into the batter until it is fully incorporated.
  4. 4Heat a 10-inch non-stick crepe pan or griddle over medium heat until it reaches approximately 375°F (190°C).
  5. 5Pour about 1/4 cup of the batter onto the hot pan and immediately tilt the pan in a circular motion to spread the batter into a thin, even layer.
  6. 6Cook for 2 to 3 minutes, or until the edges of the crêpe begin to lift and the underside is golden brown. Carefully flip the crêpe and cook the other side for another 1 to 2 minutes until golden brown.
  7. 7Remove the cooked crêpe from the pan and repeat the process with the remaining batter, adding a tiny bit more butter to the pan between crêpes if needed, until all the batter is used.
  8. 8Serve the crêpes immediately with the 1 cup Mixed Berries and a dollop of the 1/2 cup Crème Fraîche.
