Ingredients

  • 1 cup Polenta (Cornmeal)
  • 3 cups Water
  • 1/2 teaspoon Salt
  • 2 tablespoons Olive Oil
  • 1 cup Marinara Sauce
  • 1/4 cup Grated Parmesan Cheese (optional)

Instructions

  1. 1Preheat oven to 400°F (200°C). Grease a baking sheet.
  2. 2In a saucepan, bring water and salt to a boil. Gradually whisk in the polenta and reduce heat to low. Cook, stirring constantly, for about 20-25 minutes, or until the polenta is thick and pulls away from the sides of the pan.
  3. 3Stir in 1 tablespoon of olive oil and Parmesan cheese (if using).
  4. 4Pour the polenta onto the prepared baking sheet and spread it into an even layer, about 1/2 inch thick.
  5. 5Let the polenta cool completely (about 30 minutes).
  6. 6Cut the cooled polenta into fries.
  7. 7Drizzle the fries with the remaining olive oil and bake for 20-25 minutes, or until golden brown and crispy.
  8. 8Serve hot with marinara sauce for dipping.
