Ingredients

  • 1 pound Italian sausage
  • 28 ounces Canned crushed tomatoes
  • 1 cup Coconut cream
  • 1 Onion
  • 3 cloves Garlic
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1/4 teaspoon Red pepper flakes
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Bring a large pot (e.g., 6-quart or larger) of water to a rolling boil over high heat (212°F / 100°C). Add the 1 pound of gluten-free pasta and cook for 8-10 minutes, or until the pasta is tender but still firm to the bite (al dente). Drain the cooked pasta thoroughly and set it aside.
  2. 2In a large 12-inch skillet, heat the 2 tablespoons of olive oil over medium heat (300-325°F / 150-160°C). Add the 1 pound of Italian sausage, breaking it apart with a spoon. Cook for 8-10 minutes, stirring occasionally, until the sausage is browned and cooked through, reaching an internal temperature of 160°F (71°C). Drain any excess fat from the skillet.
  3. 3While the sausage cooks, finely chop the 1 onion and mince the 3 cloves of garlic. Add the chopped 1 onion and minced 3 cloves of garlic to the skillet with the cooked sausage. Continue to cook over medium heat for 5-7 minutes, stirring frequently, until the onion is translucent and softened, and the garlic is fragrant.
  4. 4Stir in the 28 ounces of canned crushed tomatoes, 1 cup of coconut cream, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1/4 teaspoon of red pepper flakes, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper into the skillet. Increase the heat slightly to bring the mixture to a gentle simmer (185-205°F / 85-96°C).
  5. 5Once simmering, reduce the heat to low and cook the sauce for 15-20 minutes, stirring occasionally, until it has slightly thickened and the flavors have deepened and melded together.
  6. 6Add the drained 1 pound of cooked gluten-free pasta to the sauce in the skillet. Toss gently with tongs or a spoon to ensure all the pasta is evenly coated with the creamy tomato and sausage sauce. Serve immediately.
