Colcannon with Kale and Dairy-Free Butter

A traditional Irish dish of mashed potatoes with kale (or cabbage). This version is made dairy-free by using dairy-free butter and plant-based milk for a creamy and comforting side dish.

Ingredients

  • 2 lbs Potatoes
  • 1 bunch Kale
  • 4 tbsp Dairy-free butter
  • 1/2 cup Unsweetened almond milk
  • 4 Green onions
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1Peel and chop the potatoes. Boil them in salted water until tender, about 15-20 minutes.
  2. 2While the potatoes are cooking, wash and chop the kale. Steam or sauté the kale until wilted, about 5-7 minutes.
  3. 3Drain the potatoes and return them to the pot. Mash with dairy-free butter and almond milk until smooth and creamy. Season with salt and pepper.
  4. 4Stir in the cooked kale and chopped green onions.
  5. 5Serve hot.
