Colcannon Soup (Dairy-Free)

Ingredients

  • 1 lb Potatoes, peeled and cubed
  • 4 cups Cabbage, shredded
  • 6 cups Vegetable broth
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 1 cup Dairy-free milk (unsweetened)
  • to taste Salt and pepper

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add onion and garlic and cook until softened, about 5 minutes.
  3. 3Add potatoes, cabbage, and vegetable broth to the pot.
  4. 4Bring to a boil, then reduce heat and simmer for 20 minutes, or until potatoes are tender.
  5. 5Using an immersion blender, blend the soup until smooth.
  6. 6Stir in dairy-free milk. Season with salt and pepper to taste. Heat through.
