Ingredients

  • 2 cups Potatoes, mashed
  • 1 cup Cabbage, shredded
  • 1/2 cup Green onions, chopped
  • 2 tbsp Butter
  • 1/4 cup All-purpose flour
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1In a large bowl, combine the 2 cups of mashed potatoes, 1 cup of shredded cabbage, and 1/2 cup of chopped green onions.
  2. 2Add the 2 tablespoons of butter, 1/4 cup of all-purpose flour, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the bowl.
  3. 3Mix all the ingredients together thoroughly with your hands or a sturdy spoon until everything is evenly distributed. The mixture should hold together when squeezed.
  4. 4Roll the mixture into small balls, about 1 to 1.5 inches in diameter.
  5. 5Heat a large skillet over medium heat. The skillet should be hot enough that a drop of water sizzles and evaporates quickly.
  6. 6Carefully place the colcannon bites into the hot skillet, ensuring not to overcrowd the pan. Cook for 5 to 7 minutes per side, until they are golden brown and heated through. You should see a nice crust forming on the outside.
  7. 7Remove the colcannon bites from the skillet and place them on a plate. Serve warm.
