  • 2 cups Grated Coconut
  • 1 cup Brown Sugar
  • 1/2 cup Water
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Ginger

Instructions

  1. 1Lightly grease a baking sheet or line with parchment paper.
  2. 2In a saucepan, combine brown sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves.
  3. 3Continue to cook, stirring constantly, until the mixture thickens slightly (about 5-7 minutes).
  4. 4Remove from heat and stir in the grated coconut, vanilla extract, and grated ginger.
  5. 5Drop spoonfuls of the mixture onto the prepared baking sheet.
  6. 6Let cool completely until hardened. Store in an airtight container.
