Ingredients

  • 2 cups All-Purpose Flour
  • 1 cup Grated Coconut
  • 0.75 cup Water
  • 0.5 tsp Salt
  • 2 tbsp Coconut Oil
  • 2 medium Onions
  • 2 tbsp Sugar
  • 1 tsp Chili Flakes
  • 1 tbsp Lime Juice

Instructions

  1. 1In a bowl, combine flour, grated coconut, salt, and water. Mix well to form a soft dough.
  2. 2Divide the dough into 4 equal portions and roll each into a thin circle.
  3. 3Heat a flat griddle or pan over medium heat. Cook each roti for 2-3 minutes per side, or until golden brown and cooked through.
  4. 4For Seeni Sambol: Heat coconut oil in a pan. Add sliced onions and cook until caramelized.
  5. 5Add sugar, chili flakes, and lime juice. Cook for another 2-3 minutes until the mixture thickens.
  6. 6Serve the roti with Seeni Sambol.
