Ingredients

  • 2 cups All-Purpose Flour
  • 1 cup Grated Coconut
  • 1/2 cup Water
  • 1/2 tsp Salt
  • 2 medium Red Onions, thinly sliced
  • 3 tbsp Coconut Oil
  • 1 tbsp Dried Red Chilies, crushed
  • 2 tbsp Sugar
  • 1 tbsp Lime Juice

Instructions

  1. 1In a large bowl, combine flour, grated coconut, salt, and water. Mix well to form a soft dough.
  2. 2Divide the dough into equal portions and roll each portion into a thin circle.
  3. 3Heat a griddle or skillet over medium heat. Cook each roti for about 2-3 minutes per side, until golden brown and cooked through.
  4. 4For the Seeni Sambal: Heat coconut oil in a pan. Add sliced red onions and sauté until softened and slightly caramelized.
  5. 5Add crushed red chilies, sugar, and lime juice. Cook until the onions are a deep reddish-brown color and the mixture is sticky.
  6. 6Serve the coconut roti warm with a generous helping of Seeni Sambal.
