Coconut Porridge with Cinnamon and Nutmeg

Ingredients

  • 2 cups Coconut Milk
  • 2 cups Rice Milk
  • 1/2 cup Rolled Oats
  • 2 tbsp Brown Sugar
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt

Instructions

  1. 1In a medium saucepan, combine the 2 cups of coconut milk, the 2 cups of rice milk, the 1/2 cup of rolled oats, the 2 tablespoons of brown sugar, the 1 teaspoon of cinnamon, the 1/4 teaspoon of nutmeg, the 1 teaspoon of vanilla extract, and the 1/4 teaspoon of salt.
  2. 2Place the saucepan over medium heat. Bring the mixture to a gentle simmer, which is when small bubbles start to appear around the edges. Stir frequently, about every minute, to make sure nothing sticks to the bottom of the pan. This should take about 5 to 10 minutes.
  3. 3Once simmering, reduce the heat to low. Continue to cook the porridge for 20 to 25 minutes, stirring occasionally. The porridge is ready when the rolled oats are fully cooked and the mixture has thickened to a consistency you like. It should be creamy and thick enough to coat the back of a spoon.
  4. 4Serve the coconut porridge hot. If you like, you can add a little extra cinnamon or nutmeg on top.
