Ingredients

  • 3 medium Very ripe plantains
  • 1/2 cup All-purpose flour
  • 1/4 cup Shredded coconut
  • 2 tablespoons Sugar
  • 1/2 teaspoon Ground ginger
  • 1/4 teaspoon Salt
  • 1 cup Vegetable oil

Instructions

  1. 1Peel the 3 medium very ripe plantains and place them in a medium bowl. Mash the plantains thoroughly with a fork until mostly smooth, ensuring there are no large chunks.
  2. 2Add the 1/2 cup all-purpose flour, 1/4 cup shredded coconut, 2 tablespoons sugar, 1/2 teaspoon ground ginger, and 1/4 teaspoon salt to the bowl with the mashed plantains. Stir everything together with a spoon until well combined and a thick batter forms.
  3. 3Pour the 1 cup vegetable oil into a large, heavy-bottomed skillet. Heat the oil over medium heat until it reaches 350°F (175°C).
  4. 4Carefully drop rounded tablespoons of the plantain mixture into the hot oil. Do not overcrowd the skillet; fry in batches if necessary. Fry the fritters for 3 to 4 minutes per side, until they are golden brown and crispy. The oil should sizzle gently around them.
  5. 5Using a slotted spoon, remove the golden-brown fritters from the hot oil. Place them on a plate lined with paper towels to absorb any excess oil.
