Ingredients

  • 1 cup Coconut Flour
  • 1/2 cup Tapioca Starch
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 2 large Eggs
  • 2 tablespoons Olive Oil
  • 1/2 cup Water
  • 4 tablespoons Za'atar Spice Blend
  • 4 tablespoons Olive Oil (for topping)

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2In a bowl, whisk together coconut flour, tapioca starch, baking powder, and salt.
  3. 3In a separate bowl, whisk together eggs, olive oil, and water.
  4. 4Add the wet ingredients to the dry ingredients and mix until a smooth dough forms.
  5. 5Divide the dough into 4 equal portions. On a lightly floured surface (use tapioca starch), roll each portion into a thin circle.
  6. 6Place the flatbreads on a baking sheet lined with parchment paper.
  7. 7In a small bowl, combine za'atar spice blend and olive oil.
  8. 8Spread the za'atar mixture evenly over each flatbread.
  9. 9Bake for 15-20 minutes, or until golden brown and cooked through.
  10. 10Serve warm.
