Coconut Drops (Gluten-Free)

Ingredients

  • 2 cups Coconut Flakes
  • 1 cup Brown Sugar
  • 1/2 cup Water
  • 1 teaspoon Ginger
  • 1 teaspoon Vanilla Extract

Instructions

  1. 1In a medium saucepan, combine the 1 cup of brown sugar, 1/2 cup of water, and 1 teaspoon of ginger.
  2. 2Place the saucepan over medium-high heat and bring the mixture to a boil, stirring constantly until the 1 cup of brown sugar is completely dissolved. Cook for 5 minutes.
  3. 3Add the 2 cups of coconut flakes to the saucepan. Continue to cook, stirring constantly, for 10 to 15 minutes, or until the mixture thickens and the coconut flakes look translucent. The mixture should be sticky.
  4. 4Remove the saucepan from the heat. Stir in the 1 teaspoon of vanilla extract until it is fully incorporated.
  5. 5Using a spoon, drop rounded spoonfuls of the coconut mixture onto a baking sheet lined with parchment paper. Leave about 1 inch of space between each drop.
  6. 6Allow the coconut drops to cool completely on the parchment paper for at least 1 hour, or until they are firm and set. Once cooled, they can be gently removed from the parchment paper.
