Ingredients

  • 8 cups Stale Bread
  • 4 cups Coconut Milk
  • 1 cup Brown Sugar
  • 4 tbsp Flaxseed Meal
  • 12 tbsp Water
  • 2 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 2 large Mango
  • 1 tbsp Lime Juice

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease a baking dish.
  2. 2In a bowl, combine flaxseed meal and water. Let it sit for 5 minutes to thicken.
  3. 3In a large bowl, tear or cube the stale bread.
  4. 4In a saucepan, heat coconut milk and brown sugar until sugar is dissolved. Stir in vanilla extract, cinnamon, and nutmeg.
  5. 5Pour coconut milk mixture over the bread. Add flax egg and mix well. Let it soak for 15 minutes.
  6. 6Pour the mixture into the prepared baking dish. Bake for 45 minutes, or until golden brown and set.
  7. 7While the bread pudding is baking, prepare the mango coulis. Peel and chop mango. Blend with lime juice until smooth.
  8. 8Let bread pudding cool slightly before serving. Drizzle with mango coulis.
