Classic American Meatloaf with Roasted Potatoes

Ingredients

  • 1.5 lbs Ground beef
  • 0.5 cup Onion
  • 2 cloves Garlic
  • 0.75 cup Gluten-free rolled oats
  • 0.25 cup Tomato paste
  • 0.25 cup Dairy-free milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 lbs Potatoes
  • 3 tbsp Olive oil
  • 0.25 cup Ketchup (for topping)

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Finely chop the onion and mince the garlic.
  3. 3In a large bowl, combine ground beef, chopped onion, minced garlic, gluten-free rolled oats, tomato paste, dairy-free milk, Worcestershire sauce (or substitute), salt, and pepper. Mix gently with your hands until just combined. Do not overmix.
  4. 4Shape the mixture into a loaf and place it in a baking dish.
  5. 5Spread ketchup evenly over the top of the meatloaf.
  6. 6Wash and cut the potatoes into 1-inch cubes. Toss them with olive oil, salt, and pepper in a separate bowl.
  7. 7Arrange the seasoned potatoes around the meatloaf in the baking dish.
  8. 8Bake for 60 minutes, or until the meatloaf is cooked through (internal temperature reaches 160°F or 71°C) and the potatoes are tender and golden brown.
  9. 9Let the meatloaf rest for 10 minutes before slicing.

Tamari (gluten-free soy sauce) or coconut aminos
