Classic American Meatloaf with Roasted Potatoes

Ingredients

  • 1.5 lb Ground beef
  • 0.5 cup Onion
  • 2 cloves Garlic
  • 0.75 cup Gluten-free breadcrumbs
  • 0.5 cup Ketchup
  • 0.25 cup Dairy-free milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1.5 lb Potatoes
  • 2 tbsp Olive oil

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Finely chop the onion and mince the garlic.
  3. 3In a large bowl, combine ground beef, chopped onion, minced garlic, gluten-free breadcrumbs, 1/4 cup ketchup, dairy-free milk, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix gently with your hands until just combined. Do not overmix.
  4. 4Shape the mixture into a loaf and place it in a loaf pan or on a baking sheet.
  5. 5Spread the remaining 1/4 cup ketchup evenly over the top of the meatloaf.
  6. 6Wash and cube the potatoes into 1-inch pieces. Toss them with olive oil, salt, and pepper.
  7. 7Arrange the seasoned potatoes around the meatloaf in the baking pan.
  8. 8Bake for 50-60 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C) and the potatoes are tender and browned.
  9. 9Let the meatloaf rest for 10 minutes before slicing.
