Classic American Meatloaf with Roasted Potatoes

Ingredients

  • 1.5 lb Ground beef
  • 0.5 cup Onion
  • 2 cloves Garlic
  • 0.75 cup Gluten-free breadcrumbs
  • 0.5 cup Unsweetened plant-based milk
  • 0.5 cup Ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 lb Potatoes
  • 3 tbsp Olive oil

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Finely chop the onion and mince the garlic.
  3. 3In a large bowl, combine ground beef, chopped onion, minced garlic, gluten-free breadcrumbs, plant-based milk, ketchup, Worcestershire sauce (or substitute), Dijon mustard, salt, and pepper. Mix gently with your hands until just combined. Do not overmix.
  4. 4Shape the mixture into a loaf and place it in a baking dish.
  5. 5In a separate bowl, toss the potatoes with olive oil, salt, and pepper. Arrange the potatoes around the meatloaf in the baking dish.
  6. 6Bake for 50-60 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C) and the potatoes are tender and golden brown.
  7. 7Let the meatloaf rest for 10 minutes before slicing.
