Ingredients

  • 4 medium Ripe bananas
  • 1/2 cup Rice flour
  • 1/4 cup Tapioca starch
  • 2 tablespoons Sugar
  • 1/2 cup Water
  • 1 cup Vegetable oil

Instructions

  1. 1In a medium bowl, whisk together the 1/2 cup rice flour, 1/4 cup tapioca starch, and 2 tablespoons sugar until combined.
  2. 2Gradually whisk in the 1/2 cup water until you have a smooth batter with no lumps.
  3. 3Pour the 1 cup vegetable oil into a large, heavy-bottomed skillet or pot. Heat the oil over medium heat until it reaches 350°F (175°C).
  4. 4Peel the 4 medium ripe bananas and slice them into 1/2-inch thick rounds.
  5. 5Dip each banana slice into the batter, ensuring it is fully coated on all sides.
  6. 6Carefully place the battered banana slices into the hot 1 cup vegetable oil, making sure not to overcrowd the skillet. Fry for 2-3 minutes per side, or until the batter is golden brown and crispy.
  7. 7Using a slotted spoon, remove the fried bananas from the oil and place them on a plate lined with paper towels to absorb any excess oil.
