Ingredients

  • 4 medium Ripe bananas
  • 1/2 cup Rice flour
  • 1/4 cup Tapioca starch
  • 2 tbsp Sugar
  • 1/4 tsp Salt
  • 1/2 cup Water
  • 1 cup Vegetable oil, for frying

Instructions

  1. 1Peel the 4 medium ripe bananas and cut each one in half lengthwise.
  2. 2In a medium bowl, whisk together the 1/2 cup rice flour, 1/4 cup tapioca starch, 2 tablespoons sugar, and 1/4 teaspoon salt. Gradually whisk in the 1/2 cup water until you have a smooth batter with no lumps.
  3. 3Pour the 1 cup vegetable oil into a large, heavy-bottomed skillet. Heat the oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is hot enough by dropping a tiny bit of batter into it; it should sizzle immediately.
  4. 4Dip each banana half into the batter, making sure it is completely coated. Let any excess batter drip off for a second.
  5. 5Carefully place the battered banana halves into the hot 1 cup vegetable oil. Fry for 2-3 minutes on each side, until the batter is golden brown and looks crispy. Do not overcrowd the skillet; fry in batches if necessary.
  6. 6Using a slotted spoon or tongs, remove the fried banana slices from the hot oil. Place them on a plate lined with paper towels to drain off any extra oil.
  7. 7Serve the Chuối Chiên immediately while they are still hot and crispy.
