Ingredients

  • 4 Ripe Bananas
  • 1/2 cup Rice Flour
  • 1/4 cup Tapioca Starch
  • 2 tbsp Sugar
  • 1/4 cup Coconut Milk
  • 1 cup Vegetable Oil

Instructions

  1. 1Peel the 4 Ripe Bananas and cut each one in half lengthwise.
  2. 2In a medium bowl, whisk together the 1/2 cup Rice Flour, 1/4 cup Tapioca Starch, and 2 tbsp Sugar. Gradually whisk in the 1/4 cup Coconut Milk until you have a smooth batter with no lumps.
  3. 3Pour the 1 cup Vegetable Oil into a large, heavy-bottomed skillet or wok. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  4. 4Dip each banana half into the batter, making sure it is completely coated on all sides. Let any excess batter drip off for a moment.
  5. 5Carefully place the battered banana halves into the hot oil, being careful not to overcrowd the pan. Fry for 3-5 minutes, turning occasionally, until the batter is golden brown and crispy.
  6. 6Using a slotted spoon or tongs, remove the fried bananas from the oil. Place them on a plate lined with paper towels to drain any excess oil.
  7. 7Serve the Chuối Chiên immediately while they are still warm and crispy.
