Ingredients

  • 4 medium Ripe Bananas
  • 1/2 cup Rice Flour
  • 1/4 cup Tapioca Starch
  • 2 tbsp Sugar
  • 1/4 tsp Salt
  • 1/2 cup Coconut Milk
  • 2 cups Vegetable Oil, for frying

Instructions

  1. 1Peel the 4 medium Ripe Bananas and cut each one in half lengthwise.
  2. 2In a medium bowl, whisk together the 1/2 cup Rice Flour, 1/4 cup Tapioca Starch, 2 tbsp Sugar, and 1/4 tsp Salt until well combined.
  3. 3Gradually pour in the 1/2 cup Coconut Milk while whisking constantly, until you have a smooth, lump-free batter.
  4. 4Heat 2 cups Vegetable Oil in a deep fryer or a large, heavy-bottomed pot over medium-high heat until it reaches 350°F (175°C).
  5. 5Dip each banana half into the batter, turning to coat all sides evenly.
  6. 6Carefully place the battered banana halves into the hot 2 cups Vegetable Oil, being careful not to overcrowd the pot. Fry for 2-3 minutes, or until the batter is golden brown and crispy.
  7. 7Remove the fried bananas from the oil using a slotted spoon and place them on a plate lined with paper towels to drain any excess oil.
  8. 8Serve the Chuối Chiên warm.
