Chocolate Santafereño (Hot Chocolate with Cheese)

Ingredients

  • 4 cups Water
  • 4 ounces Unsweetened Chocolate, chopped
  • 4 tablespoons Panela (unrefined cane sugar) or Brown Sugar
  • 2 whole Cloves
  • 1 small Cinnamon Stick
  • 4 ounces Queso Campesino or Mozzarella, cubed

Instructions

  1. 1In a medium saucepan, combine 4 cups of water, 4 ounces of unsweetened chocolate (chopped), 4 tablespoons of panela (or brown sugar), 2 whole cloves, and 1 small cinnamon stick.
  2. 2Place the saucepan over medium heat. Stir constantly until the 4 ounces of unsweetened chocolate is completely melted and the 4 tablespoons of panela (or brown sugar) has dissolved. This should take about 3-5 minutes. The mixture will start to thicken slightly.
  3. 3Bring the mixture to a gentle simmer. Reduce the heat to low and let it simmer for 5 minutes, stirring occasionally, to allow the flavors to blend. You will notice a rich chocolate aroma.
  4. 4Carefully remove and discard the 2 whole cloves and the 1 small cinnamon stick from the saucepan.
  5. 5Pour the hot chocolate mixture evenly into 4 mugs.
  6. 6Add a few cubes of 4 ounces of queso campesino (or mozzarella) to each mug of hot chocolate. Serve immediately. The cheese will begin to melt slightly into the hot chocolate.
